This Baseball Family and Community Cookbook is a treasure of recipes that have been contributed by our baseball family, including previous players, coaches, and our community of Wildcat fans! It was compiled by the Trigg County Diamond Club, LLC, which helps support our local high school baseball team, Trigg County Wildcats. We help by contributing to anything that may be needed over and above what the Athletic Department contributes, such as field maintenance, equipment, and travel. It also works to give a scholarship to each senior player for him to further his education, so it's very important for us to raise money. |

AUNT HEATHER'S BREAKFAST CASSEROLE
Ingredients:
2 lbs. sausage
3 c. hashbrown shreds
seasoning (salt & pepper or Season All)
2 c. shredded cheese
1 c. Bisquick
2 c. milk
6 eggs
Procedure:
Heat oven to 350 degrees. Grease casserole dish. Crumble sausage and brown. Drain sausage. Mix sausage, hashbrowns, seasoning, and 1-1/2 c. of cheese. Place in casserole dish. Mix milk, Bisquick and eggs together. Pour on top. Cook for 40-45 minutes. Sprinkle with remaining cheese on top and melt for 5 minutes. Enjoy!
Variation: Add mushrooms, peppers, onion, etc., for those who like more flavor. |
