Camper Breakfast


Ingredients:
1/4 cup of butter or margarine
1/4 cup diced onions
3 medium potatoes cut in 3/4 inch cubes
1-12 oz. can of ham,spam, or meat of choice, cut in 3/4 inch cubes
6 eggs
1/2 tsp salt
1/4 cup shredded star cheddar cheese

Directions:
Melt butter/margarine in large skillet, sauté onion and potatoes until potatoes are slightly brown.  Cook covered for about 15 minutes or until potatoes are almost tender.  Stir in meat cubes.  In medium bowl beat eggs with salt and pour over potato mixture.  Cook over coals, occasionally slip spatula underneath potatoes and meat to let uncooked egg mix flow to the bottom.  When eggs are set, sprinkle with cheese,cover skillet a minute or so until cheese melts. Serves 6
