Easy Fiesta Chicken

Ingredients:

3 Shallots, finely chopped

2 tsp. Olive Oil

Salt and ground pepper

1 medium onion, chopped

4 large boneless chicken breasts cut into slices

1 c. water

8 oz jar salsa(hot or mild)

cooked noodles or rice optional.

Directions:

In a skillet brown shallots and onions in olive oil over medium heat. When transparent, add chicken, salt and pepper. Stir often until chicken is browned. When chicken is done, add jar of salsa and water. Bring to a boil, stirring frequently, to coat chicken well. Simmer for 15 minutes or until salsa thickens. Serve over noodles or cooked rice if desired.
