Escalloped Chicken
Ingredients:
1 whole chicken or 4 to 5 chicken breasts
1/2 loaf of white bread, broken into pieces
2 cups milk
2 or more cups chicken broth
3 beaten eggs
salt and pepper to taste
Directions:
Boil the chicken and cut into pieces. In a large bowl, mix the chicken, bread, milk, broth, eggs, salt and pepper. Stir until the bread is almost dissolved. Pour into a 9x13" backing dish. Bake for 2 hrs at 300 degrees. This is an easy recipe and delicious. I fix it for church suppers and pot lick picnics, and never have any left. This recipe is also a family favorite too.
