"Nisu" Cardamon Coffee Bread

Ingredients

2pkg. yeast

1/2 c. warm water

1tsp. sugar

1 1/2 c. milk, scalded and cooled to 105 degrees

1/2 c. sugar

2 tsp. salt

1 1/2 tsp. ground cardamon

4 eggs

7 to 8 c. bread flour

1/2 c. melted butter

Directions

dissolve yeast in warm water and sugar. Combine yeast mixture, milk, sugar, salt, cardamon and half the flour. Beat with a spoon until dough is smooth and shiny. Beat in melted butter. fold in remaining flour, 1 cup at a time, until dough is stiff, but not dry. Rest 15 min. Knead, using more flour as needed. Let rise until doubled (1 hr or so). Punch down dough and form into loaves for Nisu. Let rise for 1 hour. Brush with egg and milk glaze. Bake at 375 degrees for 20 to 25 minutes or until done.

For Cinnamon rolls: Roll out dough, 1/2 at a time. Spread with melted butter, brown sugar and cinnamon. Roll up and slice into one inch rolls. Place on cookie sheet and let rise 1/2 hour to an hour. Bake at 375 degrees or until done. Combine powdered sugar and strong coffee to make glaze and drizzle on hot rolls.
