Quajado De Spinaca #1
(spinach and macaroni casserole)
2 (10 oz) pkg frozen spinach defrosted and drained, or 2lb fresh spinach washed and cut finely.
1c elbow macaroni
6 eggs
4 oz cottage cheese
1/4 c feta cheese crumbled (optional)
1c grated parmesan or romano cheese
1 tsp salt
1tsp baking powder (optional)
Prepare spinach and drain well. Cook macaroni as directed on label. Beat eggs well, then mix with cottage cheese, feta parmesan cheese, baaking powder and salt in large bowl and mix well. Place in greased and heated 9x9 inch backing dish and bake in preheated 400 degrees oven approximatly 25 minutes.
