Jefferson Davis Pie

 

2 c. light brown sugar

½ c. butter

4 egg yolks

2 Tbsp. all purpose flour

1 tsp. Cinnamon

½ tsp. all spice

1 tsp nutmeg

1 c. heavy cream

½ c. chopped dates

½ c. raisins

½ c. pecan pieces

1 9 inch pie shell

3 egg whites

¼ tsp. cream of tartar

6 Tbsp. sugar

½ tsp. vanilla

 

Preheat oven 325 degrees.

 

          Cream together butter and brown sugar.  Separate egg whites and yolks.  Beat in the 4 egg yolks with the butter and sugar.  Mix flour and spices together.  Stir in cream, dates, raisins, and nuts.  Put filling into pie shell ad bake until set – about 30 minutes.  Cool completely.  Top with meringue – put back into oven to brown the topping.

 

Meringue:  Beat egg whites and cream of tartar until foamy, beat in 6 Tbsp. sugar – 1 tablespoon at a time; continue beating until stiff, beat in vanilla.
