Fruit Pizza

 

1-cup margarine

1-cup sugar

1 egg

1 tsp. vanilla

1-¾ cups flour

1 tsp. cream of tartar

1 tsp. baking soda

2 (8oz) pkg. cream cheese

2 Tbsp. sugar

1 tsp. vanilla

2/3-cup sugar

2 Tbsp. cornstarch

¼ tsp. salt

1 cup orange juice

 

Preheat oven to 350 degrees.

Cream together margarine and sugar.  Add egg and vanilla and beat well.  Add flour, cream of tartar and baking soda and mix well. 

Work together with hands, spread out with rolling pin on slightly floured surface (or spread right on greased round pizza pan).  Bake for 8-10 minutes.

Mix together the cream cheese, sugar and vanilla.  Spread over cooled cookie.  Arrange sliced or cut, well-drained fresh fruit of your choice in any pattern over cheese layer.

Mix and boil together for 1 minute the sugar, cornstarch, salt, and orange juice.  Cool for 5 minutes. Drip glaze over fruit or spread with pastry brush (be sure and cover all fruit to keep it from turning brown).  Refrigerate till glaze is firm.  Serve cut into slim pie wedges.  This is beautiful done with colorful fruit such as kiwi, strawberry, melons, orange, canned pineapple slices, banana or anything of bright color.  Enjoy, it’s also very delicious.

You can also brush a glaze on of melted jelly or marmalade, which will give the fruit a quick, shiny glaze.
