Mini Blinis

 

1 large loaf white bread

12 oz cream cheese

¼ c. sugar

2 sticks butter or margarine, melted

1 egg yolk

Mixture of 2 Tbsp. sugar and ½ tsp. cinnamon

 

Cut crusts off bread and flatten each slice with a rolling pin.  Soften cream cheese and mix with sugar and egg yolk.  Spread on bread slices and roll up like a jellyroll.  Brush lightly with melted butter and dip into cinnamon and sugar mixture.  Cut each roll into halves or thirds.  Bake in 350-degree oven for 15 to 20 minutes.  Serve plain or with sour cream.  May be frozen.
