Pam’s Carrot Cake

 

1 ¼ C flour

2 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp cinnamon

1 tsp nutmeg

½ tsp ground cloves

1 ¼ C oil

1 large can crushed pineapple - drained

1 C granulated sugar

1 C brown sugar

2 tsp vanilla

4 eggs

3 C carrots – coarsely chopped

2/3 C Quaker oats

1 C walnuts – coarsely chopped

 

Beat all ingredients except flour, oats, carrots and walnuts – add last – bake @ 250 degrees for 1 hour in 13 x 9 inch bundt pan.

Frosting:

2       8 ounce cream cheese – cold

3       Tbsp grated orange peel

1 C powdered sugar

3 Tbsp orange juice

½ tsp orange extract

mix all ingredients and frost cooked cake – as an option – finely chopped walnuts may be sprinkled on sides of cake
