Candy’s Chicken Enchilada Casserole

 

Ingredients

 

1 medium onion, chopped

2 Tbsp. vegetable oil

4 c. cooked shredded chicken

1-15 oz. Can tomato sauce

1-14 ½ oz. Can whole peeled tomatoes*

1 pkg. Lawry’s Taco seasonings

½ tsp. Garlic powder

1 doz. Corn tortillas     

2-2 ½ oz. Cans sliced ripe black olives

3 c. grated Monterey Jack cheese

 

 

Directions:

 

Sauté onion in oil.  Add chicken, tomato sauce, tomatoes, and taco seasoning and garlic powder.  Blend well.  Bring to a boil; reduce heat and simmer for 15 minutes uncovered.  In a 12 x 9 x 2-glass dish, place 4 tortillas, pour 1/3 of chicken mixture and spread evenly.  Sprinkle 1/3 of olive and 1/3 of cheese; repeat layers until you have a topping of cheese.  Bake at 350 degrees for 30-40 minutes until heated through and cheese is melted.

*Undrained and cut up.
