Zucchini Chocolate Cake

 

Ingredients:

½ c. butter

½ c. vegetable oil

2 eggs

1 tsp vanilla

2 c. peeled, finely diced zucchini

1 tsp baking soda

½ tsp cinnamon

½ c. sour milk

2 ½ cu flour

4 Tbsp cocoa

½ tsp baking powder

1/3 c. chocolate chips

½ tsp cloves

 

Directions:

Dice zucchini first; cut in half slices lengthwise into quarters.  Remove center part of seeds and pulp.;  Peel then dice into ¼ inch cubes.  Cream butter, oil and sugar.  Add eggs, vanilla and sour milk and beat with mixer until well blended.  Mix together dry ingredients; add to creamed mixture and beat well.  Stir in diced zucchini.  Put in greased 9x12 floured pan; sprinkle top with chocolate chips and bake at 325 degrees for 40 to 50 minutes.  To make sour milk, add 1 teaspoon lemon juice to ½ cup milk and let stand 5 minutes.
