Squash Fritters – Page 76

 

4 yellow squash

2 tsp. Chopped onion (optional)

3 eggs

2 tsp. Milk

Salt & pepper to taste

Flour

 

 

Directions:

 

Take a potato peeler and start peeling the squash all the way to the seeds.  Now you have a bowl of thin strips of squash.  Add the eggs, onions, milk, salt and pepper and just enough flour to hold it together as you drop it like patties in a frying pan to fry.  I use Crisco in my frying pan.  Fry until golden on both sides.  Children love squash this way.
