Crawfish Etouffee

 

Ingredients:

 

½ cup oil

1 medium onion, chopped

2 cloves garlic, chopped

2 tablespoons paprika

Salt and pepper to taste

1 tablespoon flour

½ cup parsley

½ cup green onions

2 lb. crawfish

 

 

Directions:

 

Mix crawfish with paprika, salt, flour, and pepper.  Sauté onions and garlic in oil and cook until onions are clear in color.  Add crawfish with ¼ cup of water to start.  Turn stove on low heat and cover, stirring 2 or 3 times.  Cook about 10 minutes.  Add green onions and parsley and cook about 10 minutes. 

Serve over white rice.
