Mandarin Orange Dessert Crepes

 

Ingredients

 

3 eggs

1 c milk

1 c sifted flour

2 T melted butter

¼ c mandarin orange juice

2 T sugar

1 t mandarin orange peel diced

½ t orange extract

Dash of salt

Non-flavored cooking spray

 

Filling:

 

½ lb. unsalted butter

2 t grated mandarin peal

3 T Mandarin orange syrup

 

 

Directions

 

Crepes:  In order listed, put ingredients in a blender.  Blend at high speed for 20-30 seconds.  Refrigerate for at least 2 hours.  Spray non-stick crepe pan, 6 or 8 inch size.  Make thin crepes.

Cool

Filling:  Soften butter to room temperature, mix in other ingredients.

Fill cooled crepes, gold in quarters, Triangle shape.  Layer in baking sheet. 

Drizzle top with mandarin orange peel.
