Melrose Chicken Salad

 

Ingredients:

3 chicken breasts

½ tsp salt

2 medium sized apples, cubed

½ c. salad dressing

½ tsp dry mustard

½ c. green onions, chopped

2 stalks celery, chopped fine

1 bell pepper, chopped

1 tsp paprika

¼ c.  sweet pickle relish

3 boiled eggs, peeled

¼ c mayonnaise

1 tsp olive oil or vegetable oil

 

Directions:

Wash and dry chicken with a paper towel.  Place chicken in a medium-size pot and cover with water.  Boil until done.  Drain and let cool.  Cut up on a cutting board, dicing chicken. Put into a salad dish.

 

Chop eggs up and add to chicken.  Add salad dressing and all other ingredients, except apples.  Mix well with salad fork.  Add apples and you will have a delicious salad.
