Teddy Roosevelt's Black Bean Soup

Ingredients:
2 cups black beans
3 quarts water
1 bay leaf
1 ham bone
1 grapefruit peeled, sectioned, membrane removed
1 beef bouillon cube
1 small green pepper, minced
1 garlic clove, crushed
1/4 cup dry sherry
1/2 cup finely chopped onion

Directions:
Wash beans.  Cover with cold water.  Soak overnight and drain.  Add the 3 quarts of water, Bay leaf and ham bone.  Simmer until the beans are completely soft and the liquid is fairly thick, adding more water if necessary.  Do not puree or sieve.  Add grapefruit pulp, bouillon cube, green pepper, garlic and sherry.  Simmer half and hour longer.  Serve with 1 Tbsp. chopped onion per serving on top of the soup.  Serves 8
