Orange Cheesecake
Ingredients:
Crust:
2 c. gingersnap cookies, crumbled (30 cookies)
1/4 c. melted butter
1 tsp. finely grated orange peel

combine cookie crumbs butter and orange peel until well mixed.  Press into the bottom of a 9 inch spring form pan. Set aside.

Filling:
3 (8 oz.) pkg. cream cheese
3/4 c. sugar
1 Tbsp finely grated orange peel
1/2 c. orange juice
3 eggs
6 oz. bittersweet chocolate, curled or shaved, for garnish

In a large mixing bowl, beat cream cheese and sugar until well mixed.  gradually add orange juice, beating until smooth.  Add eggs and beat until well mixed.  Stir in orange peel.  Pour into crust.  Place spring form pan into a shallow baking pan and bake at 350 degrees for 50 to 60 minutes or until center appears nearly set.  Chill 4 to 24 hours.  Finish the cake with chocolate curls or shaved chocolate.
