Escoveitched fish

Ingredients:

3 use king fish or snapper or whiting sliced in ½ inch slices

4 tsp black pepper

4 tsp salt

Juice from 3 limes

2 cups white vinegar

½ cup oil for frying

2 large onions

 

Directions:

Wash fish thoroughly in water, add lime juice.  Dry fish thoroughly.  Coat the fish on both sides with the combined salt and pepper, then set aside on paper towel.  Heat oil in frying pan to boiling point, then fry fish on both sides until nice and crisp.  Set fish aside into a pan or bowl.  Ina sauce pan combine vinegar and sliced onions, bring to a boil.  Simmer until onions are tender! Remove from the fire and cool.  Pour over the fish and steep
