2 Tbsp. butter
3 fryers, cut into pieces
1 c. onion, sliced
2 cloves garlic, crushed
2 Tbsp. flour
1 lb. tomatoes
1 tsp. dried thyme leaves
2 tsp. parsley leaves
2 bay leaves
1 1/2 tsp. salt
1/4 tsp. Tobasco
3 c. bell peppers, chopped
Saute chicken until golden brown in hot butter. Remove pieces. Add onion and garlic to drippings and saute until soft, about five minutes. Blend in flour until smooth. Remove from heat. Stir in tomatoes, thyme, parsley, bay leaves, salt and Tobasco. Add back browned chicken pieces. Cook, covered, over low heat for 15 minutes, stirring occasionally. Add green peppers. Cook covered over low heat thirty minutes longer or until chicken is tender. Makes four servings. |
