4 slices bacon
2 medium onions, finely chopped
4 cups diced raw potatoes
Salt and pepper to taste
2 Tbsp. chopped parsley
1 cup hot water
5 cups milk
Chop bacon and fry in a kettle with onions. When onions are golden brown, add potatoes, salt, pepper, parsley, and hot water. Cover and simmer about 20 minutes, or until potatoes are tender. Mash coarsely. Add the milk and heat slowly to boiling point. Helen Kramer |
