EGGPLANT PARMESAN
1 eggplant1 egg, beaten1 (8 oz.) pkg. grated Parmesan or Mozzarella cheese salt pepper vegetable oil flour
Heat oil in deep skillet or fryer. Cut eggplant into thin slices. Dip in egg. Dip in flour. Place slices into hot oil and cook until lightly browned. Remove from oil and drain. Sprinkle with salt and pepper, then cheese.
