VEGETABLE CLAM CHOWDER


ingredients

1/4 c. finely chopped bacon
1/4 c. chopped onion
1 can minced clams
1 c. water
1 (16 oz.) can whole tomatoes
1 (8 oz.) can tomato sauce
2 c. chopped potatoes
2 c. chopped carrots
1/3 c. chopped celery
1 Tbsp. parsley flakes
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. thyme
1/2 c. frozen peas
1/2 c. frozen corn

preparation

Sauté bacon and onion until bacon is crisp and onion is tender. Drain clams, reserving liquid. Add clam liquid, water, tomatoes and tomato sauce to onion and bacon. Add potatoes, carrots, celery and seasonings. Simmer on low heat until potatoes and carrots are tender. Add clams, peas and corn. Heat to boiling. Serves 4.
