Cook rice in boiling salted water until tender. Drain and while still hot, mix with onion and seasonings; cool. Add chicken, celery, olives and mayonnaise. Toss lightly. Peel oranges and split them into sections. Cut 1/2 of the sections into small pieces. Add to mixture. To Serve: Place salad on bed of lettuce. Garnish with remaining orange sections. |
