"HEART HEALTHY" RAISIN OATMEAL COOKIES


ingredients

1 c. old fashioned oats
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/8 tsp. grated nutmeg
2 egg whites
1/2 c. firmly packed light brown sugar
1/2 c. granulated sugar
3/4 c. vegetable oil
1/4 c. skim milk
1 tsp. vanilla
1 c. raisins

preparation

Preheat oven to 350°. Toast oats in preheated oven until crisp and fragrant, about 10 minutes; set aside. Spray 2 large cookie sheets with nonstick spray.

Sift together flour, baking soda, cinnamon and nutmeg on a sheet of wax paper. In a large bowl, stir together egg whites, sugars, oil, milk and vanilla. Stir in dry ingredients, oats and raisins.

Drop by rounded teaspoonfuls 1 inch apart on cookie sheets. Bake 15 to 18 minutes. Yields 3 dozen cookies.
