BAKED MUSHROOMS IN SOUR CREAM


ingredients

1 lb. large, fresh mushrooms
2 Tbsp. butter
1 c. sour cream
2 Tbsp. flour
1/2 c. Cheddar cheese, grated
1/2 c. Monterey Jack cheese, grated
dash cayenne pepper

preparation

Remove the stems from the mushrooms, and slice into thick slices. In a skillet, sauté the mushrooms in the butter until they are barely tender. Transfer them to a well buttered baking dish, arranging them in neat, overlapping rows. In a saucepan, combine the sour cream, flour, salt and pepper. Simmer until heated, but do not let boil. Spoon the sauce over the mushrooms and top with the cheeses and cayenne. Bake at 350° for 15 minutes. Serves 4.
