Put vanilla wafers in 36 to 40 paper liners. Mix cream cheese, sugar and vanilla. Spoon filling in paper lined muffin pans. Bake at 300° for 25 minutes. Then mix sour cream, 1 1/4 cups sugar and vanilla. Spoon 1 teaspoon of mixture on top of each cupcake. Put 1 teaspoon of strawberry preserves on top. Bake 5 minutes more. Refrigerate until serving. |
