3 1/4 c. flour plus some additional to sprinkle over mixture
1 egg
1 1/2 Tbsp. salt
1 Tbsp. baking powder
1 1/4 c. water plus additional water for boiling dumplings
3 slices dried white bread, cut in 3/4-inch cubes


Mix together in a large bowl everything except the bread and water for boiling dumplings. Hand beat for 5 minutes. (Yes, you will get tired!)

Mix in bread cubes. Sprinkle with flour. Cover and let sit 2 minutes. Flour your hands and a spoon. Make balls of dough.

Pour water into a large pot and bring to a boil. Drop balls into boiling water. This may cool the water enough that it stops boiling. When water starts to boil again, boil balls of dough for 20 minutes. Stir occasionally.

Serve with sauerkraut or wrap dough around plums or peaches; boil as before. Serve with melted butter, cottage cheese and cinnamon and sugar. Serves 6.
