5 LAYER SQUASH CASSEROLE


ingredients

4 or 5 yellow squash
1 1/2 pkg. saltine crackers
2 sticks butter
1 can cream of mushroom soup
1 medium onion
1 pkg. shredded medium or sharp cheese

preparation

Slice squash and boil until tender. Drain well. Melt butter, add chopped onion and cook in butter until tender. Crumble crackers in bowl. Pour butter and onions into the crackers and mix until well coated. In a 8 x 8 baking dish place:

1st layer - 1/2 of the cracker mix

2nd layer - squash

3rd layer - soup

4th layer - cheese

5th layer - Rest of cracker mix

Cook until bubbly and light brown on 400 degrees.
