BUTTER PECAN COOKIES


ingredients

1/2 c. butter
1 tsp. vanilla
1/4 c. confectioners sugar, sifted
1 c. sifted cake flour
1/8 tsp. salt
1/2 c. chopped pecans

preparation

Cream butter until soft. Add vanilla. Add sugar, gradually, beating until light and fluffy. Sift flour. Measure. Sift again with salt and add gradually to the sugar mixture. Add pecans. Mix well. Drop by teaspoonfuls on ungreased cookie sheet. Flatten cookies and bake in moderate 325° oven about 20 minutes or until lightly browned. While hot, roll in confectioners sugar.
